Spotlight: The Better Butchers

Meet The Better Butchers… plant-based meat (and cultivated in development) innovator and the “#SeeingGreen Solutionist of the Day” for May 9.

The Better Butchers is a Canadian plant-based meat company founded in 2022 by Mitchell Scott and Celeste Trujillo, both veterans of the alternative protein industry. Based in British Columbia and now shipping across Canada, the company specializes in crafting high-quality meat alternatives using mushroom-based proteins, particularly oyster mushrooms, combined with ingredients like pea protein. Their product lineup includes offerings such as Natural, Italian and Chorizo plant-based grounds, as well as the Better Beast—a chickpea seitan-based stuffed roast designed for festive meals. The Better Butchers also is actively working on adding new SKUs to this lineup, including burgers, sausages, chunks/strips and whole cuts.

Sustainability is at the core of the company’s mission. By focusing on mushroom proteins, which require significantly less water, land, and energy compared to traditional animal agriculture, the brand aims to offer environmentally friendly alternatives to meat. Additionally, The Better Butchers is investing in the future of sustainable food by collaborating with cultivated fat startups and academic institutions to develop products that are a hybrid of mycelium and cultivated meat/fat technologies. This approach seeks to replicate the taste and mouthfeel of conventional meat while minimizing environmental impact.
