Wheyward Spirit is a pioneering craft distillery that upcycles excess whey – the liquid co-product of cheese and other dairy products -- into premium, award-winning spirits.
Founded by food scientist Emily Darchuk, the company blends sustainability with innovation to create a smooth, sippable base spirit. Wheyward Spirit brings a unique flavor profile to cocktails while elevating the spirits industry with a distinctly circular approach. In addition to its original spirit, the company also has launched Wheyward Wheyskey, an aged product that continues the mission of upcycling dairy waste into high-quality liquor.
Sustainability and circularity are at the core of Wheyward Spirit’s identity, helping address part of the 30-40% of all food produced in the U.S. that is lost or goes to waste. By partnering with domestic dairies to repurpose whey—an often discarded or undervalued byproduct—the company helps reduce food waste and water use, lower greenhouse gas emissions and support more sustainable supply chains in both the dairy and spirits industries. All products are made in the U.S., with a focus on local sourcing, small-batch production, and minimal environmental impact. The brand is a member of the Upcycled Food Association and Green Sports Alliance.
The result is a spirit that’s as good for the planet as it is on the palate – helping consumers “feel good about what’s in their glass from the first sip to the last.”
